Nadia Lim proves less is more at Wellington festival

When it comes to food less really is more. With New Zealand’s abundance of such high quality produce, Kiwis are increasingly adopting the philosophy where the best ingredients are used in their truest form.

Now Wellingtonians get the opportunity to discover the taste delights and well-being rewards of serving simple, healthy and full-of-flavour meals prepared under the simplicity mantra.

Cookbook author, nutritionist and former MasterChef winner Nadia Lim is demonstrating how to use less ingredients and techniques, yet create big flavours, at this year’s Visa Wellington on a Plate festivities.

The upcoming festival is headlined by the Fisher & Paykel MasterClass at which Nadia is set to demonstrate, along with nine of Australasia’s top food talent, over the weekend of 11-12 August.

The MasterClass is the ultimate festival experience for foodies, showcasing the finest of foods and talented chefs.

Nadia Lim’s appearance is supported by Regal King Salmon and sees the foodie focus on using top quality fresh ingredients straight from the ground and sea. On the menu are some delicious dishes including basil-cured King salmon tartare and sashimi with ponzu.

Nadia will host a special session from 4.45pm - 6.15pm on Saturday 11th August. This session is open to all Wellington Fisher & Paykel MasterClass one and two day ticket holders.

Nadia champions healthy living with an inspiring and down-to-earth food philosophy. She advocates “eating your colours, having a glass of wine with dinner, and having everything in moderation, including moderation.”

“The beauty of foods such as salmon is you don’t have to do much to it to create something impressive. It’s simply delicious and full of flavour to start with, so it’s all about accentuating those qualities with a clever balance of the right flavours,” Nadia says.

Regal King Salmon is sustainably grown in the deep cool waters of the Marlborough Sounds.

Nadia has a background as a dietician and nutritionist which is from where her relationship with the brand has stemmed.

As well as getting insider secrets from top cooks such as Nadia, foodies will leave the MasterClasses bellies-full and truly inspired by “less is more”.
